History of Champagne Chavost

Champagne Chavost was born from the ambition of several winegrowers from Chavot-Courcourt, a village in the Marne valley south of Épernay, in 1946. Named in honour of the former name of the village, "Chavost", the estate has preserved the fundamental values that motivated its creation: solidarity, sharing, and love of the land. This initial cooperative allowed these pioneers to pool their resources and expertise, with the objective of producing quality wines while supporting the local economy.

In 2019, a turning point came with the arrival of Fabian Daviaux, a young winemaker who had spent over ten years vinifying wines in the four corners of the world. Drawing on his experiences and his bold vision, Fabian decided to refocus the estate around the production of natural Champagnes, with no added sulfites. He convinced the members of the cooperative to take risks by embarking on this unprecedented path for a Champagne house. Today, thanks to this approach, Champagne Chavost stands out with cuvées that celebrate the pure essence of Champagne.

Terroirs and Vines of Champagne Chavost

Located in the Coteaux Sud d'Épernay, Champagne Chavost benefits from an exceptional terroir that combines diversity and richness. The plots are spread across predominantly clay-limestone soils, with north-facing exposures that bring a marked freshness and minerality to the grapes. This terroir is particularly well-suited to the cultivation of Meunier, which thrives in these rich soils, as well as to Chardonnay, which draws all its finesse and elegance from the limestone veins.

The 5-hectare vineyard, entirely cultivated under organic farming since the 2023 harvest, reflects the estate's commitment to sustainability and respect for nature. The harvests are carried out manually at optimal ripeness, ensuring grapes of the highest quality. This authentic terroir allows Champagne Chavost to produce Champagnes that are at once powerful, elegant and imbued with a strong identity.

Winemaking at Champagne Chavost

Winemaking at Champagne Chavost is a true declaration of intent. Under the direction of Fabian Daviaux, the estate has adopted a radically natural approach, aiming to minimise oenological interventions. The wines are crafted with no added sulfites, no enzymes, no tannins, and no charcoal. Alcoholic fermentation is spontaneous, activated solely by indigenous yeasts present on the grapes and in the cellar, at carefully controlled temperatures. Malolactic fermentation also occurs naturally, thanks to the bacteria present in the cellar.

The cuvées of Champagne Chavost are also crafted without filtration, fining, or chaptalization, which guarantees maximum purity and an authentic expression of the terroir. The wines undergo no acidification or deacidification, thereby preserving all their natural freshness. This meticulous process gives birth to singular Champagnes, at once intense and delicate, allowing Champagne Chavost to distinguish itself in the world of Champagne.

Blanc Assemblage Brut Nature

50% Chardonnay, 50% Meunier

On the nose, aromas of apple, tarte tatin, and almond, with hints of pastry. The palate is opulent, well-structured and balanced.

Blanc de Chardonnay Brut Nature

100% Chardonnay

Yeasty and creamy on the nose, with mineral notes of toasted bread and mirabelle plum. On the palate, roundness and freshness balance each other for a smooth and easy-drinking finish.

Blanc de Meunier Brut Nature

100% Meunier

Delicate aromas of stewed red fruits, apple-pear, and hawthorn. The palate is vinous and full, with a long and persistent finish.

Rosé de Saignée Brut Nature

67% Pinot Noir, 33% Meunier

Intense nose of blackcurrant, cherry and raspberry. The palate recalls the structure of a red wine, with great length and aromas of red fruits on the finish.
