Founded in 1985 by Olivier Jullien, this estate is rooted in the heart of Terrasses du Larzac, where intellectual freedom guides every cuvée.
- Terroir: Moderately elevated vineyards on clay soils scattered with limestone pebbles, alongside silica and sandstone, shape wines with distinctive minerality.
- Winemaking: Uncertified biodynamic methods, hand harvesting and aging on the lees in 600-liter barrels and stoneware jars for a pure, precise expression.
Tasting notes for Mas Jullien Côteaux du Languedoc États d’Âme Chut 2024 white
Appearance: A pale yellow hue, bright and crystal-clear, suggesting a silky texture at first glance.
Nose: Aromas of pine sap and fresh fennel with a peppery touch, followed by stone and orchard fruits—ripe pear and quince—before opening into anise and floral notes of chamomile.
Palate: A rounded, harmonious opening, with generous texture and focused tension, supported by vibrant minerality and a dry structure. The long, crystalline finish lingers on saline, peppery and anise notes.
Serve at 11°C in a medium-sized white wine glass to reveal its full purity.
