The Saint-Aubin 1er Cru Les Castets 2022 white (Domaine Thomas Morey) expresses the clay-limestone soils of the Côte de Beaune. This barrel-aged Chardonnay seduces with its notes of lemon, peach and almond, its lively palate and its minerality. To enjoy with fish or poultry, at 12-14°C. Ageing potential: 5 to 7 years.
Nestled in the heart of Chassagne-Montrachet, this family estate perpetuates an artisanal expertise, shaped by the Burgundian hillsides and a constant pursuit of elegance.
- Terroir : From the clay-limestone slopes of the Côte de Beaune, where the south-east exposure and stony soils sculpt Chardonnays of vibrant minerality.
- Winemaking : Gentle pressing, fermentation in barrels with indigenous yeasts and ageing on lees for a silky texture and a pure expression of the terroir.
To the eye: A pale yellow robe with green highlights, of crystalline clarity and subtly golden brilliance.
On the nose: Aromas of lemon zest and fresh grapefruit intertwine with notes of white peach, before giving way to a saline touch and subtle hints of vanilla and toasted almonds.
On the palate: A creamy yet taut texture, driven by a lively acidity and chalky minerality, where flavors of ripe fruit and hazelnut stretch into a long and precise finish.
Serve between 12 and 14°C in a Burgundy glass to reveal its full purity.
