Champagne Olivier Horiot: Champagne and wines from Les Riceys in biodynamics
The Olivier HORIOT estate with its 8.5 hectares of vineyard, is located in the famous commune of Les Riceys, in the Aube, which was historically both a Champagne and Burgundy property.

The village of Les Riceys is in fact the only one in Champagne to have three controlled appellations: Champagne of course, but also two appellations producing "still" wines: Coteaux Champenois (in red and white) and Rosé des Riceys, a vinous and surprising rosé. Serge Horiot, Olivier's father, was the founder of the Ricey-bas wine cooperative. The Horiot estate therefore set out in 2000 to build a unique range of still wines representing the diversity of terroirs, such as the Rosé des Riceys En Valingrain and the Rosé des Riceys En Barmont, as well as the Esquisse de Rosé des Riceys. Under the Coteaux Champenois label, the estate offered the Riceys Rouge en Barmont cuvée and the Riceys Blanc En Valingrain cuvée. The Horiot estate then began producing its own Champagne cuvées from 2004 onwards. Olivier Horiot thus crafts, using biodynamic farming, a range of rosés des Riceys and coteaux champenois (unfiltered), vinified by lieu-dit, which recover the liveliness and aromatic finesse of northern pinot noirs, once widely produced in the region. The Horiot estate's grape varieties consist of 75% pinot noir, 10% chardonnay, and small proportions of pinot blanc, pinot meunier, arbane and meslier — two of Champagne's old traditional grape varieties replanted by a handful of forward-thinking winemakers. It is worth noting that since 2013 the vineyard has been certified organic and biodynamic (Biodyvin). The original Champagne Olivier Horiot range consists of vintage Champagnes, vinified and aged for 1 year in oak barrels on fine lees with bâtonnage, in order to best respect the fruit and reveal each vintage as naturally as possible. In the range, one will particularly note: the Champagne Horiot 5 Sens cuvée, made from an original blend of five grape varieties (chardonnay, pinot noir, pinot blanc, pinot meunier and arbane), sourced from 5 different terroirs vinified separately. It offers a seductive nose marked by very ripe fruit. The palate is vinous and dynamic, always brimming with fruit (apple, grape and small red fruits). The Champagne Olivier Horiot Solera cuvée, with its complex and evolved notes of yellow fruits, white-fleshed fruits and tertiary notes (almonds). Ample and supple, the solera finishes at length on very indulgent notes. It will require a few years of cellaring. The Champagne Rosé Olivier Horiot Sève cuvée, a Saignée Rosé. The Champagne Horiot Métisse, the Champagne Horiot Sève, a Blancs de Noirs, and finally the Champagne Horiot Arbane Pure cuvée. The range as a whole constitutes a unique gustatory adventure, with truly singular Champagnes of very strong character.
