Tasting notes for Château Cheval Blanc Saint-Émilion Grand Cru 2007
To the eye – A garnet red robe with tawny highlights, dense and luminous, heralding a velvety texture and generous substance.
On the nose – First, aromas of ripe dark fruits (blackberry, blackcurrant), followed by woody and roasted notes, then a subtle floral hint (violet) and a saline touch evoking damp undergrowth.
On the palate – A supple and silky attack, carried by a lively acidity and a chalky minerality; the fine, tightly knit tannins release flavours of black olives, blonde tobacco and candied red fruits, leading to a long and harmonious finish.
Serve at 16–18°C in a Bordeaux glass to bring out its purity and complexity.
