Vincent Dauvissat Chablis Grand cru Les Preuses 2021
The Vincent Dauvissat Chablis Grand Cru Les Preuses 2021 expresses the purity of Kimmeridgian soils. Vinified in tank and barrel, this Chardonnay offers notes of citrus, white flowers and a saline minerality. Its precise and fresh palate pairs beautifully with seafood and noble fish until 2035.
Domaine Vincent Dauvissat
A family heritage deeply rooted in the hillsides of Chablis, the estate embodies the exacting standards of an exceptional terroir and the transmission of artisanal expertise.
- Terroir : Kimmeridgian soils of the Chablis Grand Crus, where chalk and marine fossils sculpt wines of vibrant minerality.
- Winemaking : Traditional methods – fermentation in tank and in barrels, patient aging to reveal the purity of the Chardonnay.
Tasting notes for Domaine Vincent Dauvissat Chablis Grand Cru Les Preuses 2021
- To the eye : Pale gold robe with green highlights, of a crystalline clarity and a silky texture that already hints at its tension.
- On the nose : Aromas of fresh lime, acacia blossom and russet apple, followed by a hint of flint and a subtle iodine-tinged salinity.
- On the palate : A lively and precise attack, carried by elegant acidity and a chalky minerality; the long, saline finish leaves an impression of purity and depth.
Serve between 10 and 12°C in a Riedel Vinum Chablis glass to bring out its freshness and complexity.
Vintage 2021
A vintage marked by vibrant freshness, where the balance between maturity and acidity imparts a remarkable tension and great precision to the wines.
- Aging potential : To be kept until 2035, or even beyond, under optimal conditions (stable temperature, controlled humidity and away from light).
