From the Kimmeridgian terroir of Les Clos, the Chablis Grand Cru 2023 by Vincent Dauvissat is an exceptional Chardonnay. Its notes of apple, candied lemon and gunflint combine with a mineral and taut palate. Ideal with seafood, it promises a remarkable aging potential.
Domaine Vincent Dauvissat
Heir to a family expertise rooted in the hillsides of Chablis, this estate embodies rigor and faithfulness to the Burgundian terroir.
- Terroir: Chalky Kimmeridgian soils, Grand Cru classified plots, cool and sunny climate of the Yonne – an alchemy that imparts to the wines their vibrant minerality and saline tension.
- Vinification: Gentle pressing, fermentation in old oak barrels, patient aging without excessive intervention – a pursuit of purity and faithful expression of Chardonnay.
Tasting notes for the wine Domaine Vincent Dauvissat Chablis Grand Cru Les Clos 2023
To the eye: A pale golden robe with green highlights, of crystalline clarity and a silky texture that already hints at its density.
On the nose: Aromas of fresh Williams pear, tart apple, candied lemon zest, followed by hawthorn blossom notes and a saline touch reminiscent of sea spray – a palette that is both fruity and mineral, of remarkable precision.
On the palate: A lively and taut attack, underpinned by an elegant acidity that stretches into an ample, chalky texture, before a long and saline finish where hints of gunflint and subtle vanilla intertwine.
Serve between 10 and 12°C, in a white Burgundy wine glass to reveal its full complexity.
Vintage 2023
A vintage marked by optimal grape maturity, combining freshness and concentration, ideal for lovers of Chablis Grand Cru.
- Aging potential: 20 to 40 years, to be stored in a cool cellar (12-14°C) away from light.
