Vincent Dauvissat Chablis Grand cru Les Clos 2021
The Vincent Dauvissat Chablis Grand Cru Les Clos 2021, born from the Kimmeridgian soils of Chablis, is a mineral and elegant Chardonnay. Its notes of citrus and gunflint precede a lively and silky palate. Perfect for cellaring until 2075, it pairs beautifully with seafood and aged cheeses.
Domaine Vincent Dauvissat
A family estate rooted in the hillsides of Chablis, where time sculpts wines of rare purity.
- Terroir: Kimmeridgian soils, rich in marine fossils, in the Chablis Grand Cru appellation – a terroir that gives the wines their mineral signature and characteristic tension.
- Vinification: Traditional methods, aging in oak barrels for a precise yet profound expression of Chardonnay.
Tasting notes for Domaine Vincent Dauvissat Chablis Grand Cru Les Clos 2021
To the eye: A golden robe with green highlights, of silky clarity and a brilliance that already hints at its vivacity.
On the nose: Aromas of candied citrus – orange and yellow lemon – followed by notes of crisp apple and ripe pear, then a saline touch reminiscent of flint, before opening onto a subtle woody vanilla and a hint of anise.
On the palate: A dense and velvety texture, carried by a lively acidity that underscores the chalky minerality of the terroir, leading to a long, taut finish of persistent elegance.
Serve between 10 and 12°C in a white Burgundy wine glass to reveal its full complexity.
Vintage 2021
A vintage marked by vibrant freshness, where the balance between ripeness and mineral tension is expressed with rare precision.
- Aging potential: Store for 10 to 15 years in a cool cellar (12–14°C), away from light, for a harmonious evolution toward more complex notes.
