- Terroir: Clay-limestone soils of the Côte de Nuits, where Grand Crus such as Chapelle-Chambertin reveal a chalky minerality and unique depth.
- Vinification: Aged in oak barrels, with respect for the fruit and silky tannins, producing wines of taut elegance and long persistence.
Tasting notes for Domaine Ponsot Chapelle-Chambertin Grand Cru 2012
To the eye: A garnet red robe with deep reflections, of velvety density, like a ruby polished by time.
On the nose: First, aromas of black cherry and wild blackberry, followed by a touch of liquorice and damp undergrowth, before a subtle saltiness recalls the chalky origins of the terroir.
On the palate: A fresh and vibrant attack, where fine tannins envelop a dense and silky core, carried by precise acidity and a mineral finish, punctuated by a hint of white pepper.
Serve at 16–18°C in a Burgundy glass to release its full complexity.
