This champagne is made from 100% Pinot Noir grapes grown on south-facing plots, ensuring optimum ripeness. Handcrafted vinification favors organic grapes, spontaneous fermentation in 350 to 500-liter oak barrels, and aging on lees for 10 months and 15 months on laths, with no dosage (0 g/l), offering a pure expression of terroir.
To the eye, its luminous gold color sparkles with delicate bubbles. On the nose, tasting notes reveal aromas of ripe yellow fruit, such as mirabelle plum, enhanced by hints of gingerbread and saline minerality. On the palate, it offers a rich texture, balanced acidity and a vibrant finish, marked by notes of candied lemon.
