The Champagne Clandestin Boréal Brut Nature 2022, a Blanc de Noirs from Pinot Noir, reveals the clay-limestone soils of the Côte des Bar. Vinified with indigenous yeasts, it captivates with notes of toasted bread and citrus, a fine bubble and a mineral palate. Ideal with oysters or cheeses, it keeps for 3 to 5 years.
A small artisanal négociant born in 2016, rooted in the secret hillsides of the Côte des Bar, where Benoît Doussot and Bertrand Gautherot reveal forgotten terroirs.
- Terroir: Kimmeridgian clay-limestone soils of the Aube, north-facing – freshness and minerality preserved.
- Vinification: Purist – indigenous yeasts, ageing in neutral barrels, no dosage or filtration, for a raw expression of Pinot Noir.
Tasting Notes for Champagne Clandestin Boréal Brut Nature 2022
To the eye: Pale yellow robe with golden highlights, traversed by a fine and persistent effervescence, with a silky and airy texture.
On the nose: Aromas of fresh sourdough bread, crunchy green almonds, candied citrus zests and a saline touch reminiscent of sea foam, before opening onto discreet notes of tart cranberries.
On the palate: A juicy and creamy attack, carried by a lively acidity and a chalky mineral tension, giving way to a saline finish of elegant length.
Serve at 12 °C in a tall flute or a white wine glass to preserve its purity and nuances.
Vintage 2022
A vintage marked by balanced ripeness, where the freshness of the north-facing plots preserved the tension and minerality of the Pinot Noir.
- Ageing potential: 5 to 8 years, to be stored in a cool place (12–14 °C) away from light.
