The vineyard covers 20 hectares, including 4 hectares of white varieties (Carignan Blanc, Chenin, Clairette, Grenache, Viognier, and Petit Manseng). Domaine Mas Jullien has long been a pioneer and synonym for excellence in Languedoc, a region previously focused primarily on quantity. Olivier Jullien, along with several other star winemakers (such as Gauby, Daumas Gassac, Grange des Pères), helped Languedoc produce very high-quality wines positioned in the premium segment, which was quite rare in the region during the 1980s.

History of Mas Jullien Estate

The Mas Jullien adventure began in 1985, when Olivier Jullien, just 20 years old, dared to defy the conventions of a Languedoc in crisis. Marked by the winegrower uprisings of the 1970s, facing rampant productivism and omnipotent cooperatives, the young viticulture student transformed family outbuildings into a cellar and produced his first vintage. Assisted by his friend Jean-Baptiste Granier, he bought and leased abandoned parcels, sowing the seeds of a quality revolution. This pioneer even inspired his father to leave the cooperative to found Mas Cal Demoura in 1993. Thirty years later, Olivier continues to explore, buying and selling land to refine his terroir, moving from Grenache and Syrah to Carignan, Mourvèdre and Cinsault, better suited to balanced wines. A legendary winegrower, honored with 3 stars in La Revue du Vin de France's Guide Vert and 5 stars in Bettane + Desseauve, he embodies the oasis of quality that propelled Languedoc wines onto the international stage, proving that this region can compete with the great wines of France.

Terroirs and Vineyards of Mas Jullien Estate

Mas Jullien's vineyards flourish on the rocky terraces of the Larzac plateau, at the foot of Mont Baudille, at altitudes reaching up to 900 meters, among the highest in Languedoc. This unique microclimate, influenced by sea winds and mountain freshness, offers exceptional geological diversity: clay-limestone soils rich in pebbles for intense microbial activity, silica and sandstone for minerality, schists and marls for structure. The 18 hectares are fragmented into "island" parcels, favoring deep rooting against recurrent drought. Cultivated through intuitive biodynamics, with natural grass cover, compost and hedges to boost biodiversity, the vines averaging 35 years old produce low yields (about 30 hl/ha). Star grape varieties: Carignan for its freshness and breeding, Mourvèdre for its structure, Syrah for its spicy aromas, Cinsault for its finesse; in white, Chenin and white Carignan for acidity, Viognier and Clairette for aromatic richness. This varied terroir, saved from uprooting by Olivier's tenacity, gives the wines a chalky vibration and vertical elegance.

Winemaking at Mas Jullien Estate

Winemaking at Mas Jullien is an art of balance, guided by a minimalist and respectful philosophy. Olivier Jullien, with decades of experimentation, from whole-bunch harvesting in 1985 to no sulfur in 1989, favors indigenous yeasts and careful aging to preserve each parcel's identity. For whites: gentle crushing, direct pressing and overnight settling, followed by separate fermentation by grape variety and terroir in 600 L demi-muids, without malolactic except for white Carignan. Blending occurs post-fermentation, for saline freshness and silky patina. The reds: meticulous destemming, strict sorting, fermentation in 40 hl vats with manual punching down and temperature control to avoid overheating, for three weeks, then malolactic in vat or barrel. Initial aging of one year in demi-muids, followed by two years in foudres for subtle tannic integration. The rosé, a structured bleeding, ferments in stainless steel before a passage in Stockinger foudres. Without chemical inputs, this intuitive biodynamic approach, homeopathy included, exalts the purity of the fruit and minerality, making each Mas Jullien cuvée a model of terroir-focused winemaking.

The Cuvées of Mas Jullien Estate

Mas Jullien excels in a limited range, each revealing a facet of the Terrasses du Larzac terroir.

Pays d'Hérault White: Blend dominated by white Carignan (70%) and Chenin (30%), complemented by Clairette, Roussanne and white Grenache. Progressive nose of white flowers and zested citrus, rich and saline palate, vibrant length. Aged nearly two years, it defies time with silky texture and nuanced palette, with a refined and iodized profile.

Languedoc Rosé: Bleeding of mainly Cinsault, Carignan and Mourvèdre (proportions varying by vintage). Fermentation in stainless steel with native yeasts, then aging in mixed foudres. Structured and wild, it offers deep earthy complexity, notes of spices and red fruits, perfect to accompany summer barbecues—a rare terroir-driven rosé.

Carlan, Terrasses du Larzac: Grenache (50%), Carignan (25%), Cinsault (15%), Syrah (10%), on schistous, sandy and ferruginous soils at 240 m altitude. Century-old vines (mainly 75 years). Woody nose of underbrush and distant campfire, fruity palate of black berries, chocolate, blackcurrant and violet, with tapenade and hedge in the background. More accessible than its siblings, it combines softness and freshness for an easy-drinking yet profound red.

Lous Rougeos, Terrasses du Larzac: Carignan (50%), Syrah (40%), Grenache (10%), on limestone scree at 400-450 m altitude, west-facing above Saint-Privat. Aged 12 months in fine foudres. Crystalline acidity and aerial freshness, explosive and peppery Carignan minerality in the finish. A vertical, refined and lively red, breaking the stereotypes of the warm South for Nordic elegance.

Around Jonquières, Terrasses du Larzac: Mourvèdre (40%), Carignan (40%), Syrah (20%), from old vines on poor limestone soils. Aged two years in demi-muids and foudres. Refined power, tenacious yet supple tannins, notes of garrigue, ripe fruits and spices. Complex and harmonious, it promises aging potential of 10-15 years, with chalky breeding.
