- Winemaking: Traditional methods, slow fermentations, and barrel aging preserve the purity of the fruit and its mineral complexity.
Tasting notes for Domaine des Tours Clairette 2022 White
Appearance: Golden in color with green highlights, silky clarity, and a creamy depth, like liquid honey catching the light.
On the nose: First, fresh notes of fennel and candied citrus, then deeper nuances of licorice, wormwood, and seasoned wood, lifted by a saline touch reminiscent of sea spray.
On the palate: A full, dense texture supported by lively acidity and chalky minerality, while elegant bitterness carries the finish into a long, saline persistence.
Serve between 10 and 12°C in a Burgundy-style white-wine glass to release its complex aromas.
