Heir to a family tradition deeply rooted in the hillsides of Chablis, this estate embodies the demands of an exceptional terroir and respect for ancestral methods.
- Terroir: Kimmeridgian clay-limestone soils of the Chablis Grand Cru appellation, where chalky minerality and marine fossils sculpt the soul of the wines.
- Vinification: Manual harvesting, aging in barrels (6 to 8 years) for a pure expression and a silky tension, without artifice.
Tasting notes for Domaine Vincent Dauvissat Chablis Grand Cru Les Clos 2015
To the eye: Golden robe with green highlights, of a crystalline clarity and an almost oily texture, revealing its concentration and age.
On the nose: Aromas of candied citrus (yellow lemon, grapefruit) intertwine with notes of dried white flowers, warm flint and a saline touch reminiscent of sea spray.
On the palate: Broad and silky attack, carried by a lively and precise acidity that traces a chalky minerality; the finish, long and taut, releases nuances of gentle spices and flint.
Serve between 12 and 14°C in a Burgundy-style white wine glass, to release its full complexity.
