Vincent Dauvissat Chablis Grand cru Les Clos 2003
Born from the limestone soils of Chablis Grand Cru Les Clos, the 2003 vintage from Vincent Dauvissat captivates with its aromas of citrus and white-fleshed fruits. Its chalky minerality and taut acidity on the palate make it an elegant wine, perfect with shellfish or aged cheeses.
Domaine Vincent Dauvissat
A family estate rooted in the heart of Chablis, where Burgundian heritage has been passed down with exacting standards across three generations.
- Terroir: Kimmeridgian soils, rich in marine fossils, on the steep slopes of the Chablis Grands Crus — Les Clos and Les Preuses leading the way. A chalky terroir that imparts a distinctive minerality to the wines.
- Winemaking: Biodynamic approach, gentle pressing, fermentation in old oak barrels and ageing on fine lees to preserve the purity of the Chardonnay and the tension of the fruit.
Tasting notes for Domaine Vincent Dauvissat Chablis Grand Cru Les Clos 2003
In the glass: A golden robe with pale reflections, of crystalline clarity, with a silky texture that already hints at its density.
On the nose: Aromas of candied lemon and pink grapefruit, followed by notes of white peach and fresh almond, before a saline touch and a hint of flint underscore the depth of the terroir.
On the palate: A lively and precise attack, carried by a taut acidity and chalky minerality, stretching into a long and saline finish, where hints of acacia honey and a touch of spice intertwine.
Serve between 12 and 14°C, in a Burgundy-style white wine glass to reveal its full elegance.

A vintage marked by a hot and dry summer, where the cool Chablis nights preserved the acidity and tension of the wines, granting them an early maturity while retaining a beautiful vivacity.
