O2Y is one of the most original, creative and captivating micro-négociants on the French natural wine scene. Founded in 2020 in Poligny, in the heart of the Jura, this singular project owes its name to the initials of its three creators: Olivier Guala known as "Gallus", Yves Roy and Yoshinori Kuroda. Olivier, a former automobile enthusiast turned wine professional, partnered with Yves Roy, a Jurassian winemaker and founder of the Nøvice estate, and Yoshinori Kuroda, a young Japanese native of Osaka who worked as a sommelier in a 2-star Parisian restaurant before joining Stéphane Tissot and then Emmanuel Houillon at the renowned Domaine Overnoy. Together, they created a free and joyful natural winemaking laboratory, travelling across France to source organic grapes from trusted growers in the Jura, Alsace, Beaujolais and other regions. Since 2022, Gallus has continued the adventure with Romain Doerler, a young qualified Alsatian who came straight from Ganevat, and is also developing his own vineyards in Arbois and Poligny.
The story of O2Y begins with three unlikely encounters. Olivier Guala and Yves Roy met on the benches of the Lycée Viticole de Lons-le-Saunier during their winemaking training. A passionate natural wine enthusiast and formerly in the automotive industry (his passion still haunts the cellar, where vats and barrels sit alongside vintage cars), Olivier primarily handles the commercial side and grape sourcing. Yves Roy is a notable figure in the Jura who also vinifies for his own estate, Nøvice. Yoshinori Kuroda completes the trio: originally from Osaka, Japan, he first had a career as a carpenter before giving it all up to come to France to learn about natural wines, passing through sommellerie at a 2-star Parisian restaurant, then through Stéphane Tissot, and finally through the legendary Domaine Houillon Overnoy, where he works alongside Emmanuel Houillon.
Founded in 2020, the project started with the ambition of creating confidential, natural and highly distinctive cuvées, highlighting a unique collaboration between the three partners and each partner grower who cultivated the grapes. In 2022, Yves and Yoshi gradually stepped back to focus on their own projects. Gallus continued the adventure with Romain Doerler, a young Alsatian graduate who came from Ganevat, bringing his experience and sensitivity to Alsatian and Jura grape varieties. That same year, O2Y took a major step forward by beginning to work its own vines in Arbois and Poligny: 1.3 ha of Pinot Noir, 0.43 ha of Savagnin and 0.6 ha of Poulsard/Trousseau, in their final year of organic conversion.
The absolute particularity of O2Y is its nature as a mobile and creative négociant: the grapes come from different French wine regions, depending on encounters, vintages and opportunities. The Jura remains the heart of the project, with grapes purchased from partner growers in the Arbois and Côtes du Jura appellations, and since 2022, the estate's own vines in Arbois and Poligny. Alsace is the second region close to the heart of the project, thanks in particular to the grapes from Domaine Hertz d'Eguisheim, which supplies high-quality Alsatian white grape varieties. Beaujolais, with its Gamays on granite, clay and limestone, is also a regular source of supply. Depending on the vintages and needs (as in 2021, a year of very poor yields), O2Y may source from further afield, in the Roussillon or other regions.
The selection of grapes is based on a unique philosophy: finding growers who share the same values of respect for nature and the vine, farming organically or biodynamically, and willing to collaborate on a specific winemaking process. Each cuvée is a co-creation between O2Y and the grower who produced the grapes. The estate's own vines in Arbois and Poligny are undergoing organic conversion (certified by Alpes Contrôles), with manual harvesting and very careful vineyard work.
O2Y vinifies in a large warehouse in Poligny, where various vats and barrels coexist with vintage cars, testaments to Olivier Guala's passion for automobiles. The philosophy is clearly defined and consistent: 100% natural, with no additives, no added sulphur at any point, fermentation using only indigenous yeasts, no filtration or fining. Winemaking methods vary widely according to the grape varieties and styles sought, resulting in an impressive diversity of cuvées. Very long and gentle pressing for whites and rosés. Carbonic or semi-carbonic maceration for light, fruity reds. Long skin maceration for orange wines. Blending of grape varieties not usually associated together to create surprises and unprecedented complexity.
Aging takes place in stainless steel vats, large barrels or casks depending on the cuvée, with a case-by-case approach. The duration is adapted to each wine. Each cuvée has its own personality and its own story, linked to the terroir of origin of the grapes, the partner grower and the creativity of the trio (now the Gallus/Romain duo). The stated objective is to make the wines accessible to everyone, enthusiasts and connoisseurs alike, while maintaining the highest level of exigence and authenticity.
Vinum Bibo (Vin de France Rouge): The estate's flagship red cuvée, made from Beaujolais Gamay sourced from a blend of three plots near Saint-Germain-des-Nouelles (Arbresle area) on three different soil types (granitic, marly and calcareous). Vines worked by horse. Semi-carbonic maceration for two weeks, with 30% destemming and sandwich vatting. The result: a cuvée that expresses all the freshness and character of Gamay on granite, with a fruity and silky finish, notes of strawberry and cherry, a light and digestible palate. The estate's ultimate thirst-quenching cuvée, to be enjoyed as soon as thirst strikes.
Trompe l'Oeil (Vin de France Blanc/Orange): An atypical and disconcerting white or orange cuvée, made from an iconoclastic blend of Alsatian white grape varieties from Domaine Hertz d'Eguisheim: Sylvaner (50%), Pinot Gris (12.5%), Gewurztraminer (12.5%), Riesling (12.5%), with the surprising addition of 12.5% lightly pressed Pinot Noir. A single, unique pressing of the complete blend all at once. Vinified and aged in large barrels. Initially approachable and aromatic, a disconcerting complexity quickly reveals itself, blending the floral and spiced aromas of the Alsatian grape varieties with a subtle tannic touch from the Pinot Noir. A wine that "deceives the eye" through its hidden richness.
1 Bis (Vin de France Rouge): A red cuvée made from a blend of Poulsard and Gamay from the Jura, vinified to express the freshness and vivacity of these two Loire and Jura grape varieties. A fairly pale and bright red robe, nose of fresh red fruits, a light and tangy palate. A thirst-quenching and pleasurable Jura red, in the natural and accessible spirit championed by O2Y.
Pourquoi Non (Vin de France): A cuvée whose name is evocative of O2Y's free-spirited and curious ethos, made from varying grape varieties depending on the vintage. Red, white or orange depending on the year, this cuvée expresses the creative freedom of the project, testing new blends and unprecedented winemaking techniques. A wine of character and surprise.
Carrément (Vin de France): A direct and honest Jura red cuvée, "downright" good, as its name suggests. Made from Jura grape varieties (Poulsard, Trousseau or Pinot Noir depending on the vintage), vinified without artifice. Aromas of small red fruits, a crunchy and fresh palate, fine tannins. A red wine for immediate pleasure, to be enjoyed without ceremony.
L'Embellie (Vin de France Blanc): A white cuvée with a positive and sunny name, made from white grape varieties from the Jura or Alsace depending on the vintage, in a fresh and aromatic style. Floral and fruity aromas, a lively and light palate, mineral finish. A thirst-quenching white wine for good moods.
Gringalet (Vin de France): A cuvée made from Gringet, an extremely rare autochthonous grape variety from Savoie (commune of Ayze, 450 m altitude, calcareous scree soils). A dry white wine with aromas of white flowers and sweet almond, a lively palate of great alpine freshness. An absolute rarity — a grape variety that exists in practically only one village in the world, sublimated by O2Y's natural philosophy.
Estate cuvées (Arbois, Côtes du Jura): Since 2022, O2Y has also been producing cuvées from its own vines in Arbois and Poligny: 1.3 ha of Pinot Noir, 0.43 ha of Savagnin and 0.6 ha of Poulsard/Trousseau, currently undergoing organic conversion. These estate cuvées, which will become increasingly prominent with each vintage, will allow O2Y to further assert its Jura roots and offer its own single-parcel expressions from the Arbois and Côtes du Jura appellations.
