Vincent Dauvissat Chablis Grand Cru Les Preuses 2006
The Chablis Grand Cru Les Preuses 2006, from Domaine Vincent Dauvissat, expresses the purity of Kimmeridgian soils. This Chardonnay, with its aromas of ripe fruit and white flowers, offers a mineral, taut and persistent palate. Perfect for cellaring, it pairs beautifully with oysters and fish in sauce.
Domaine Vincent Dauvissat
A family legacy rooted in the hillsides of Chablis since 1931, this estate embodies the discreet elegance of the great white wines of Burgundy.
- Terroir: Kimmeridgian soils of the Chablis Grands Crus, where calcareous marls and marine fossils sculpt wines of crystalline minerality.
- Vinification: Traditional method, aged in barrels to preserve the purity of the Chardonnay and reveal the characteristic tension of the terroir.
Tasting notes for the wine Domaine Vincent Dauvissat Chablis Grand Cru Les Preuses 2006
In the glass: A golden robe with pale reflections, of silky clarity and a brilliance that heralds a vibrant texture.
On the nose: Aromas of white flowers and candied lemon intertwine with notes of roasted hazelnut, before giving way to a saline and chalky touch.
On the palate: A lively and precise attack, carried by taut acidity and an almost tactile minerality, stretching into a long, saline finish where ripe fruit and flint intermingle.
Serve between 12 and 14°C in a Burgundy-style white wine glass to fully reveal its complexity.
Vintage 2006
A vintage marked by generous ripeness and preserved acidity, offering a rare balance between aromatic richness and mineral freshness.
- Aging potential: Best kept until 2030 or beyond, in a cool cellar (12–14°C) away from light.
