Old Vintages

Old vintages are often more about the nose than the palate: evolved aromas of undergrowth, leather, stewed fruits, tobacco, or meat are primarily felt! Very pleasant on the nose, a beautiful symbol for your loved ones, and often delightful surprises when tasted.

Here are the most common characteristics of wines over 30 years old:

Colour: Red wines tend to evolve towards more orange, brown, or brick-red hues with age, while white wines can become more golden or amber.

Aromas: The primary and fruity aromas typical of young wines give way to more complex and evolved aromas. Notes of dried fruits, candied fruits, honey, tobacco, leather, and sometimes hints of undergrowth for red wines.

Structure: The tannins of red wines mellow over time, making the wine softer on the palate. The structure may appear lighter and more delicate, but some wines can retain a certain vigour and refreshing acidity, especially for whites.

Texture: Mature wines can develop a more velvety and silky texture on the palate, sometimes with a sensation of roundness and fullness.

Complexity: The evolution of chemical compounds in the wine gives rise to greater aromatic and gustatory complexity, offering a richer and more nuanced sensory experience.

Length on the palate: Mature wines can offer an exceptional length on the palate, with persistent flavours that linger long after tasting.

Aging potential: Some wines, although already aged for more than 30 years, may still have aging potential, especially if they have been stored under optimal conditions. They can continue to evolve and improve for many years to come. This is the case for First Growths wines from Bordeaux for instance.
