Tasting notes for Château Ausone 2005 The eye – A deep purple robe with garnet reflections, of velvety density, like a mineral velvet stretched over the glass. On the nose – First notes of fresh violet and wild blackberry, then deeper aromas of liquorice, graphite and black truffle, lifted by a saline touch evoking stones warmed by the sun. On the palate – A smooth yet vibrant texture, underpinned by precise acidity and chalky minerality, with a long, saline and spiced finish where black fruits and roasted nuances intertwine. Serve at 16–18°C in a Bordeaux glass to unlock its full complexity.
