Jean François Ganevat, affectionately nicknamed "Fanfan" by those close to him, is a Jura winemaker established at the Combe de Rotalier since 1998. Before taking over the family estate, he honed his experience as a cellar master in Burgundy, notably at Jean-Marc Morey in Chassagne-Montrachet. Upon returning to his native Jura, he gradually built a worldwide reputation through a radically artisanal approach: strict single-plot selections, rare grape varieties, biodynamics and winemaking without additives. In 2018, the Revue des Vins de France named him winemaker of the year, definitively cementing his status as an icon of natural wine.

Yes, the Domaine Jean François Ganevat is entirely converted to biodynamics, Demeter certified since 2006. In practice, this means a complete absence of synthetic products, light ploughing carried out by horse, constant manual care and the application of biodynamic preparations in the vineyards, including horsetail, nettle, dandelion and silica infusions. The harvest is done by hand, and the winemaking follows the same principles: indigenous yeasts, no added sulphur for the vast majority of the cuvées, and ageing in old barrels. The wines of Domaine Jean François Ganevat shine particularly in certain vintages that have sublimated the Jura terroirs: 2020, 2018, 2016, 2011, 2010 and 2005 are regularly cited among the great years to prioritize. The 2011 vintage has even entered into legend: the Chalasses Vieilles Vignes 1902 cuvée was named wine of the year 2014 by the Bettane & Desseauve guide. The whites made from chardonnay and savagnin have a remarkable ageing potential, while the reds based on trousseau are appreciated in their relative youth for their freshness and finesse.

The Domaine Jean François Ganevat stands out for its exceptional grape variety diversity. Jean-François works with the great Jura grape varieties such as savagnin, chardonnay, poulsard (or ploussard) and trousseau, to which pinot noir is added. But what makes the domaine truly unique is the cultivation of ancient and forgotten varieties from the Jura, such as enfariné noir, petit bécland and scévillard. With no fewer than 25 different grape varieties across 13 hectares, Ganevat is one of the rare winemakers in the world to preserve such a living ampelographic heritage.

The Domaine Jean François Ganevat produces between 35 and 50 different cuvées depending on the vintage, making it one of the most prolific estates in terms of the diversity of single-vineyard selections in the Jura. Each cuvée corresponds to a specific plot, in keeping with the winemaker's philosophy: one soil, one grape variety, one cuvée. Among the most emblematic are the Grandes Teppes Vieilles Vignes, the Chalasses Marnes Bleues in white, and the Vignes de Mon Père. Jean François Ganevat also produces négociant wines with his sister Anne, under the label Anne et Jean-François Ganevat, bringing total production to approximately 40,000 bottles per year.

Given the low yields and the worldwide reputation of the domaine, the bottles are rare and sell out very quickly as soon as they go on sale. The négociant cuvées Anne et Jean-François Ganevat, often more accessible in volume, represent a wonderful entry point for discovering the world of the domaine before venturing towards the most exclusive single-vineyard selections.

History of Domaine Ganevat

Domaine Ganevat, located in the hamlet of La Combe in Rotalier, is a family estate whose history dates back several centuries. Jean-François Ganevat represents the 14th generation to cultivate these lands, inheriting a know-how that has been passed down since 1650. However, it was in 1998 that the estate's renown truly took flight when Jean-François, after working as cellar master at the prestigious Domaine Jean-Marc Morey in Burgundy, returned to the Jura to take over the reins of the family property.

Drawing on his Burgundian experience, Jean-François Ganevat revolutionises the estate by adopting a more rigorous approach to parcel-by-parcel winemaking and applying the principles of biodynamics from 2006 onwards. He also develops a passion for old, forgotten Jura grape varieties, reintroducing ancient varieties into his vineyard. Alongside his sister Anne, he launches a négociant activity in order to meet the growing demand for his wines while maintaining extremely high quality standards.

Today, Domaine Ganevat is recognised not only for its Jura wines, but also for its unique creations from its négociant activity, which offer enthusiasts a diverse experience of French terroirs.

Terroirs and Vineyards of Domaine Ganevat

The Domaine Ganevat vineyard covers 13 hectares, spread across the steep hillsides of the Jura. This territory is a true patchwork of varied soils, ranging from blue marls to schists and clay-limestone soils. Each plot benefits from a unique terroir, giving the estate's wines a distinct personality and exceptional depth.

A third of the estate's vines are over 50 years old, and some, which are over a hundred years old, are planted with rare and forgotten grape varieties, such as enfariné noir, petit bécland and scévillard. In addition to the emblematic Jura grape varieties, such as chardonnay and savagnin, Jean-François Ganevat also cultivates historical Jurassian varieties such as poulsard and trousseau.

Biodynamics, practised since 2006, is at the heart of the work in the vineyards. Jean-François and his team strive to preserve the natural balance of the soil by using herbal preparations, such as horsetail, nettle and dandelion, while limiting the use of copper and sulphur to minimal doses. This respect for the terroir and this meticulous attention to biodiversity allow the vines to yield grapes of incomparable quality, essential to the production of the estate's great wines.

Winemaking at Domaine Ganevat

In the cellar, Jean-François Ganevat follows a non-interventionist winemaking philosophy, inspired by the methods of Jules Chauvet, a pioneer of natural wines. All of the estate's wines are vinified without additives, using indigenous yeasts, and most cuvées are produced without added sulphur or with a minimal dose (only 1 g per litre for certain cuvées). The red wines, in particular, are vinified without any sulphur, a practice that Jean-François masters with rare precision, guaranteeing the purity and longevity of his wines.

Fermentations are carried out with whole clusters for the reds, which brings additional aromatic complexity, and the ageing is long and attentive. The white wines, aged for at least two years, and up to 11 years for certain cuvées such as Les Vignes de mon Père, develop exceptional depth while retaining a brilliant freshness.

Jean-François Ganevat also experiments with various ageing vessels, such as demi-muids, terracotta jars and Burgundian barrels, in order to precisely tailor each cuvée to its terroir. This meticulous approach allows the nuances of each plot to be expressed to their fullest, producing wines that are both vibrant and elegant.
