The Chassagne-Montrachet Premier Cru Les Caillerets 2021 from Domaine Ramonet, made from Chardonnay, reveals aromas of citrus and flint on limestone soil. The palate, lively and chalky, offers a saline finish. To be kept until 2040, it pairs well with oysters and grilled fish.

Since the 1920s, this family estate has embodied the excellence of Chassagne-Montrachet, where each bottle bears the imprint of an exceptional terroir and a meticulously transmitted expertise.
- Terroir : Plots nestled in the Côte de Beaune, on limestone and stony soils, where Chardonnay draws its legendary minerality.
- Vinification : Aging in oak barrels, respect for natural cycles and the pursuit of a pure expression, without artifice.

To the eye – A golden robe with green reflections, of crystalline clarity, revealing a silky texture from the very first glance.
On the nose – Aromas of candied lemon and green apple intertwine with notes of acacia blossom, before giving way to a saline touch and the mineral evocation of a sun-drenched wet stone.
On the palate – A lively and precise attack, carried by a taut acidity that underlines a chalky texture and a persistent salinity, leading to a finish of elegant and refined length.
Serve between 10 and 14°C in a white Burgundy wine glass, to fully release its nuances.

A vintage marked by rarity, where demanding climatic conditions gave birth to wines of remarkable purity and tension.
- Aging potential : To be kept for 20 years or more, in a cool cellar (10–14°C) and away from light, to reveal its full complexity.
