From the hillsides of Vaillons, the Chablis 1er Cru Vaillons 2013 from Domaine Vincent Dauvissat is a mineral and taut Chardonnay. Its notes of gunflint and lime precede a fresh, saline palate. Perfect until 2027, it pairs beautifully with seafood and aged cheeses.
