The Les Cocus 2020 from Thomas Batardière, a white wine from the Loire, comes from a poor schist terroir. This Chenin Blanc (vines from 1958) marries white fruits and chalky minerality. Aged 10 months in barrels, it offers a lively and saline palate. Ideal with fish or to cellar for 5 to 8 years.

On the eye: Golden robe with pale highlights, of crystalline clarity and an almost silky texture.
On the nose: Aromas of crisp green apple, acacia blossom, candied lemon zest, followed by a saline touch reminiscent of sea spray and sun-warmed schist.
On the palate: A lively and taut attack, carried by a chalky acidity, a cutting minerality and a saline finish that stretches at length, leaving an impression of purity and elegance.
Serve between 10 and 12°C in a Burgundy-style white wine glass to reveal its full complexity.
