Discover Clandestin Boréal Brut Nature, a unique champagne from the bold project of Benoît Doussot and Bertrand Gautherot, based in Buxières-sur-Arce, in the Côte des Bar region. This biodynamic estate uses northern plots to reveal the quintessence of the terroir.
This Champagne is made from 100% Pinot Noir grapes grown on a Kimmeridgian terroir of clay and limestone, offering a distinctive minerality. Hand-crafted vinification includes spontaneous fermentation with indigenous yeasts in 350 to 500-liter oak barrels, 10 months ageing on lees, followed by 15 months on laths, with no dosage (0 g/l), for a pure, frank expression.
To the eye, its pale gold color with pinkish highlights sparkles with fine bubbles. On the nose, tasting notes reveal fresh aromas of redcurrant, lime and wet stone, with a herbaceous touch. On the palate, it offers a lively texture, sharp acidity and a saline finish, blending crisp red fruit and chalky minerality. Ideal with oysters or an aperitif, this Boréal Brut Nature embodies the precision and elegance of Clandestin.
