Vincent Dauvissat Chablis Grand cru Les Preuses 2012
From the Kimmeridgian soils of Chablis Grand Cru, the Les Preuses 2012 from Domaine Vincent Dauvissat is a Chardonnay aged in old barrels. Its aromas of flint and white fruits precede a mineral and fresh palate. Perfect until 2025, it pairs with oysters, crustaceans, and aged cheeses.
Domaine Vincent Dauvissat
Heir to a family tradition rooted in the hillsides of Chablis, this estate embodies the demands of an exceptional terroir.
- Terroir: Kimmeridgian, clay-limestone soils of the Chablis Grand Crus – a unique mineral signature, shaped by marine fossils.
- Winemaking: Aging in old barrels, with minimal intervention to preserve the purity of Chardonnay and reveal the chalky tension of the lieu-dit.
Tasting notes for the wine Domaine Vincent Dauvissat Chablis Grand Cru Les Preuses 2012
To the eye: A pale golden robe with green highlights, of silky clarity and crystalline brilliance.
On the nose: Aromas of linden blossom and lime blossom unfold into deeper notes of flint, dried sage, and ripe quince, underlined by a saline touch reminiscent of iodine.
On the palate: Taut and precise texture, where a lively acidity marries a chalky minerality, carried by a long and saline finish of persistent elegance.
Serve between 10 and 12°C, in a white Burgundy wine glass to exalt its complexity.
Vintage 2012
A vintage marked by balanced ripeness, where freshness and concentration respond to each other in harmony.
- Aging potential: To be stored until 2025 under optimal conditions (stable temperature, away from light), to allow its mineral complexity to fully blossom.
