The Bienvenues-Bâtard-Montrachet 2007 from Domaine Ramonet reveals the purity of the clay-limestone terroirs of Puligny. This Chardonnay, with its buttery and citrus notes, combines a lively freshness with a chalky minerality. Perfect for drinking now or cellaring until 2030, it pairs beautifully with poultry and shellfish.
A pillar of white Burgundy, this family estate has cultivated for three generations the art of the great terroirs of Puligny-Montrachet and Chassagne-Montrachet.
- Terroir: Clay-limestone soils and marls from the southern Côte de Beaune, where Chardonnay expresses a chalky minerality and a taut elegance.
- Vinification: Gentle pressing, aged in oak barrels (including a proportion of new ones) for a silky texture and preserved aromatic complexity.
Tasting notes for Domaine Ramonet Bienvenues-Bâtard-Montrachet Grand Cru 2007
To the eye – Pale gold robe with green highlights, of crystalline clarity and an unctuous viscosity that hints at a generous character.
On the nose – Aromas of acacia blossom and candied lemon intertwine with notes of roasted hazelnut and acacia honey, lifted by a saline touch evoking sea spray.
On the palate – A lively and precise attack, carried by a citrusy acidity that blossoms into a buttery, chalky texture, before a long and mineral finish marked by a persistent salinity.
Serve between 12 and 14°C in a Burgundy glass to release its full complexity.
