The production of Champagne wines from the house is ensured by a vineyard of over 166 hectares of Grands and Premiers Crus, which covers 60% of total production (the remaining 40% being secured through grape purchases). This vineyard is composed mainly of Pinot Noir (102 Ha), then Chardonnay (39 Ha) and 25 Ha of Pinot Meunier. The extreme quality of the house's cuvées is probably due to the fact that part of the reserve wines fermented in small oak barrels is kept in magnums for 5 to 12 years, then incorporated into the non-vintage brut blend.
This is rare enough to be highlighted, and one can qualify this method as a true marker of the famous Bollinger taste. The Bollinger house is at the highest level in all its cuvées, whether in the Special Cuvée Brut, the true signature of the house, of rare volume, with a creamy bubble, but of balanced style, between power and finesse. The Brut La Grande Année 2007 cuvée marks a dynamic profile carried by delicate citrus notes. The Brut Rosé Champagne is both vinous and elegant, crisp and complex, carried by delicate floral notes and red fruits. As for the RD 2002 (recently disgorged), it offers an intense and flavorful profile, of rare persistence that confirms all the breeding that a Great Champagne can carry.
