Frequently Asked Questions

Burgundy is home to some of the most prestigious wines in the world. Among the great red crus, Chambertin, Musigny and Romanée-Conti stand at the top of the hierarchy, produced from exceptional plots in the Côte de Nuits. On the white wine side, Montrachet and Corton-Charlemagne represent the absolute excellence of Chardonnay. These grand cru appellations account for only 1.5% of total Burgundy production, which explains their rare character and worldwide reputation.

The aging potential varies depending on the appellation level and the vintage. A regional Bourgogne is generally best enjoyed within 3 to 5 years following the harvest. A premier cru can be kept between 8 and 15 years, depending on the estate and the vintage. Grand crus, on the other hand, can age for several decades: some Gevrey-Chambertin or Chambolle-Musigny reach their peak after 20 to 30 years in the cellar. Sunny vintages such as 2015, 2019 or 2020 generally offer better aging potential thanks to their fine concentration of tannins and natural acidity.

The Burgundy hierarchy is one of the most precise in the world. A premier cru designates an identified plot or lieu-dit whose name may appear on the label alongside that of the village, such as Chambolle-Musigny Les Amoureuses. The grand cru, for its part, represents the supreme level: the plot is so renowned that it stands on its own as an appellation, with no mention of the village. Thus, one simply says Musigny or Bâtard-Montrachet. In Burgundy, there are 33 grand cru appellations and several hundred premiers crus, located primarily in the Côte d'Or and Chablis.

Burgundy is built on a philosophy of grape variety simplicity: two main varieties dominate the entire vineyard. Pinot Noir reigns supreme for red wines, offering fine, elegant wines of great aromatic complexity. Chardonnay asserts itself for whites, capable of expressing both the sharp minerality of Chablis and the buttery roundness of the great whites of the Côte de Beaune. This focus on two noble grape varieties is a worldwide singularity: where other regions blend several varieties, Burgundy bets everything on the pure expression of terroir through a single grape variety.

Burgundy Pinot Noir is one of the most gastronomic grape varieties there is, thanks to its finesse and natural acidity. It pairs wonderfully with beef bourguignon, the quintessential regional pairing, roasted poultry such as Bresse chicken, duck with cherries, and soft-rind cheeses like Époisses and Soumaintrain. For younger, fruitier wines, fine charcuterie and terrines also make excellent companions. Slow-cooked, patiently simmered dishes remain the royal road to showcasing a fine red Burgundy.

A red Burgundy wine is ideally served between 14 °C and 16 °C. At this temperature, the Pinot Noir reveals the full finesse of its aromas: cherry, raspberry, violet, and truffle depending on the age of the wine. Too warm, it appears heavy and alcoholic; too cold, it closes up and loses its aromatic expression. For a white Burgundy, a temperature of 11 °C to 13 °C is recommended in order to balance freshness and complexity. It is advisable to take the bottles out of the refrigerator about twenty minutes before serving.

It produces red Burgundy wines and white Burgundy wines whose quality speaks for itself. The Burgundy vineyard, covering an area of 30,000 ha, extends as follows: 6,000 ha in the Yonne (for the wines of Chablis), 8,000 in the Maconnais, 6,000 in the Côte Chalonnaise and 10,000 in the Côte d'Or (including the very famous Côte de Nuits and Côte de Beaune). The Burgundy vineyard is fragmented into a mosaic composed of thousands of plots (known here as climats), often very small (such as La Romanee, which is the smallest appellation in the world at 0.8 hectares), due to the geological origin and the highly diverse soil composition, often within the same locality. These are essentially sedimentary soils composed of clay, marl and limestone, deposited 150 million years ago during the Jurassic period on an even older substrate.

The Burgundy vineyard: its history 

The history of Burgundy wines dates back to Roman times, with the planting of the first vines. In the Middle Ages, the monks of the Abbey of Cîteaux made a significant contribution to the development of Burgundian viticulture through new viticultural and winemaking techniques.

In the 17th century, the trade in Burgundy wines grew considerably, notably thanks to the development of maritime commerce. The great Burgundy wines, highly appreciated by the nobility, were exported to England, Russia, and other European countries.

In the 19th century, Burgundy faced an economic crisis due in particular to the ravages of phylloxera as well as the growing competition from wines of other regions. The winemakers of Burgundy then decided to change their methods (reducing yields, improving winemaking techniques) in order to focus on the production of wines of the very highest quality. From this new strategy emerged the classification of Burgundy's climats, what is more commonly known today as the Burgundy wine appellation pyramid.

In the 20th century, as the reputation of Burgundy wines continued to grow, the wines of the Burgundy pyramid obtained their corresponding AOCs (appellations d'origine contrôlée) one year after the creation of this system, in 1936.

Today, the reputation of Burgundy wines is well established: many consider them to be among the finest wines in the world, with a great variety of styles that reflect the diversity of the climates and terroirs of this remarkably complex and fascinating region.

The Appellation Pyramid of Burgundy Wines

The Burgundy vineyard presents itself as an immense mosaic composed of thousands of plots (known here as climats), often of small size (La Romanée Conti is the smallest appellation in the world at 0.8 hectares), due to a geological origin and a highly diverse soil composition, often within the same lieu-dit. These are essentially sedimentary soils composed of clay, marl and limestone, deposited 150 million years ago during the Jurassic period on an even older substrate.

In order to simplify the understanding of these terroirs for the widest possible audience, the visionary Burgundy region created in the 19th century a system of hierarchical appellations known as the Burgundy wine pyramid. This Burgundy appellation pyramid is composed of four tiers, each representing an increasing degree of quality, complexity and specificity.

Here are the four levels of the Burgundy appellation pyramid, from the most general and accessible to the most specific and grandiose: 

- Regional appellations: This first tier brings together the wines of regional appellations that can be produced throughout the region and are often considered the most accessible and straightforward Burgundy wines. For example: "AOC Bourgogne" and "AOC Bourgogne Aligoté".

- Village appellations: This second level includes village appellation wines such as AOC Chablis, AOC Pommard, AOC Meursault, AOC Vosne Romanée, AOC Chambolle Musigny, and the famous AOC Gevrey Chambertin. These wines are produced within the appellation zone of their respective villages and thus offer more distinctive characteristics than regional wines.

- The Premier Cru appellations of Burgundy: This third tier brings together the wines of Burgundy Premier Cru appellations such as AOC Chablis Premier Cru, AOC Beaune Premier Cru, or AOC Volnay Premier Cru. These are wines produced from specific climates within the Villages AOC vineyards, thus offering a so-called superior quality.

- The Grand Cru appellations of Burgundy: Finally, this last level of appellation is the most prestigious, bringing together the Burgundy Grand Cru wine appellations such as AOC Chablis Grand Cru, AOC Corton Charlemagne, AOC Chambertin, AOC Montrachet, AOC Clos Vougeot, AOC Richebourg, AOC Clos de la Roche, AOC Clos Saint Denis, AOC Romanée Saint Vivant. These great Burgundy wines come from the most prestigious climates of the Burgundy vineyard and are thus considered among the greatest wines of Burgundy, thanks to their exceptional quality and complexity.

The Burgundy appellation pyramid is a complex and hierarchical system that allows wine enthusiasts to understand the quality, specificity and origin of Burgundy wines. However, it is important to note that some winemakers also produce wines without a specific appellation, which can offer great quality and excellent value for money.

The Grape Varieties of Burgundy Wines 

The grape varieties of Burgundy wines are Pinot Noir for red Burgundy wines, which produces light and elegant or powerful and full-bodied wines depending on the location of the plot, and Chardonnay for white Burgundy wines, producing great dry, aromatic, and full wines. Other grape varieties complement the Burgundy wine blend to a lesser extent: Aligoté, fresh and lively with citrus notes; Gamay, a red grape variety, most at home on the granitic soils of Beaujolais and southern Burgundy, notably used in the AOC Côteaux Bourguignons appellation.

The sub-regions of Burgundy wines, from North to South

The Burgundy vineyard covers 30,000 ha, distributed as follows: 6,000 ha in the Yonne (for the wines of Chablis), 8,000 for the wines of the Maconnais, 6,000 for the wines of the Côte Chalonnaise and 10,000 in the Côte d'Or (comprising the Côte de Nuits and the Côte de Beaune).

Burgundy Wines from Chablis

Chablis is the most northerly wine sub-region of Burgundy, renowned for its great dry and mineral white wines made from the Chardonnay grape variety. The wines of Chablis are fresh and mineral white wines. This is due to the Kimmeridgian limestone soils, as well as the cooler climate, which give the wines of Chablis their distinctive character. There are Chablis Grand Cru wines and Chablis Premier Cru wines. In Chablis, there are renowned great producers such as: Francois Raveneau, Vincent Dauvissat and also William Fevre.

Burgundy Wines from the Côte de Nuits 

The Côte de Nuits is the northern part of the Côte d'Or, which also encompasses the Côte de Beaune. The Côte de Nuits is primarily known for its Pinot Noir red wines. The wines of the Côte de Nuits are generally described as elegant, refined, complex and aromatic wines. The distinctive character of the wines is due to the limestone and clay-limestone soils of the region, as well as the climate. The Burgundy wines of the Côte de Beaune 

The Côte de Beaune is the southern part of the Côte d'Or, which also encompasses the Côte de Nuits. The Côte de Beaune is particularly renowned for its white wines made from Chardonnay (as opposed to the Côte de Nuits), owing to the calcareous soils of the region, but also for its red wines from the more clay-limestone parts of the vineyard. The white Burgundy wines of the Côte de Beaune are often rich, complex, and aromatic. The red Burgundy wines of the Côte de Beaune are rather fine, elegant, and delicate.

Among the best-known villages, the following wines can be found from North to South: Pernand Vergelesses, Ladoix, Aloxe Corton, Savigny les Beaune, Beaune, Pommard, Volnay, Monthélie, Auxey Duresses, Meursault, Puligny Montrachet, Saint Aubin, Chassagne Montrachet, and Santenay. The Burgundy wines of the Côte Chalonnaise

The Côte Chalonnaise is a sub-region of Burgundy located south of the Côte de Beaune and north of the Maconnais. The soils of the Côte Chalonnaise are composed of limestone, marl and clay, giving the wines of the region their distinctive character. The Côte Chalonnaise is renowned for its elegant, refined and fruity red wines, and its white wines full of freshness, vivacity and elegance. The wines of the Côte Chalonnaise are often more accessible than those of the Côte de Beaune or the Côte de Nuits, while still offering great quality and excellent value for money.

The main appellations of the Côte Chalonnaise are, from north to south: Bouzeron, Rully, Mercurey, Givry and Montagny. The Côte Chalonnaise generally produces white wines with notes of citrus, apple and pear, while the red wines often display notes of morello cherry, raspberry and spices. Among the greatest producers of the Côte Chalonnaise, you will find: De Villaine, Château de Chamirey, François Raquillet, Dureuil Janthial, Joblot, and also François Lumpp.

The wines of Burgundy from the Mâconnais

The Maconnais is a sub-region of Burgundy located south of the Côte Chalonnaise. The Maconnais region is known for its Chardonnay white wines that combine freshness, fruitiness and elegance, while its Gamay and Pinot Noir red wines are generally fresh and light, displaying fruity notes. The Côte Mâconnaise is in full development and produces a wide variety of high-quality wines at more affordable prices than its northern neighbours, the Côte de Nuits and the Côte de Beaune.

The main appellations of the Côte Mâconnaise are: Viré Clessé (between Tournus and Macon), Macon, Pouilly Fuissé which is located next to the famous Roche de Solutré, and Saint Véran. - Romanée Conti: produced in Vosne Romanée, Romanée Conti is an extremely rare and expensive red wine, considered by many enthusiasts to be the most prestigious wine in Burgundy and perhaps even in the world.

- Chambertin & Cie: produced in Gevrey Chambertin, Chambertin is a highly prestigious red wine, considered one of the finest in Burgundy, with great aromatic richness and a very beautiful structure. Among its greatest neighbours, one also finds Mazis Chambertin, Mazoyère Chambertin, Charmes Chambertin, Ruchottes Chambertin, Chambertin Clos de Bèze, Chapelle Chambertin, Griotte Chambertin, and Latricières Chambertin

- Musigny: produced in Chambolle Musigny, Musigny is a red wine highly sought after by wine lovers, and it is characterized in particular by its superb elegance and great finesse, with aromas of red fruits and spices.

- Clos Vougeot: this Burgundy grand cru is located in Vougeot. Clos Vougeot is famous for its red wines of great richness and complexity, with aromas of dark fruits, spices, and undergrowth. The wines of Clos Vougeot are often very full-bodied and tannic, and require time to age in the cellar to soften and express themselves fully.

- Echezeaux: Echezeaux is a Burgundy grand cru located in Flagey Echezeaux. It is renowned for its red wines of great elegance and complexity, with floral notes, red fruits, and spices. The wines of Echezeaux are often more approachable in their youth than other grand crus of the Côte de Nuits, while nonetheless having a very fine aging potential. - Montrachet & Cie: produced on a climat straddling the communes of Puligny Montrachet and Chassagne Montrachet, Montrachet is a world-renowned white wine, celebrated for its richness and complexity. Among its great neighbours one also finds: Batard Montrachet, Bienvenues Batard Montrachet, Criots Batard Montrachet, and Chevalier Montrachet

- Corton Charlemagne: produced in Aloxe Corton, Corton Charlemagne is a prestigious white wine, considered one of the finest white Burgundy wines, with great richness and beautiful minerality.

- Corton: Corton is a red grand cru of Burgundy located in Aloxe-Corton. It is known for its powerful and complex red wines, with notes of dark fruits, spices, and undergrowth. The wines of Corton are often tannic in their youth, but one must be patient for them to develop the beautiful structure and great complexity that is so characteristic of them with age.

These wines are highly sought after and, generally speaking, their prices reflect the strong demand from enthusiasts, but there are also many other Burgundy wines of very fine quality that deserve to be discovered and tasted.

Burgundy wines can be paired with a great variety of dishes, from the most approachable to the most complex. Here are some food and wine pairing ideas with Burgundy wines, organised by type of dish:

As an aperitif, start with a rather mineral and precise wine to awaken your guests' palates: a Chablis, a Bourgogne Aligoté, or a Crémant de Bourgogne will perfectly accompany canapés, spreads, oysters, and seafood.

As a starter, elevate your experience with a more complex white Burgundy wine, such as a Chablis Grand Cru, or a wine from the Côte de Beaune such as a Meursault or a Puligny Montrachet, which pair beautifully with fish-based starters, seafood and vegetables, quiches and terrines, as well as grilled fish.

With a fish dish in a cream sauce, or even with white meat or poultry in a sauce, pair your dish with a white wine such as a great Meursault like the grand cru Montrachet or a Corton Charlemagne. With your red meat dish, red Burgundy wines, in particular Gevrey-Chambertin, Nuits-Saint-Georges and Pommard, pair beautifully with red meats, game and poultry in sauce.

For cheese pairings, as a general rule, favour white Burgundy wines, such as Meursault and Corton Charlemagne, which pair well with hard cheeses. However, you may also match red Burgundy wines with soft cheeses, particularly Époisses, Cîteaux and Langres.

For dessert, return to a Crémant de Bourgogne paired with a cream and fruit tart, or bring out a fine red wine such as a Pommard with a chocolate fondant.
